hen-and-chicks, any of a number of succulent plants of the genera Echeveria and Sempervivum, in the family Crassulaceae; members of the latter genus are commonly known as houseleeks. Many of these plants are popularly called hen-and-chicks because of the way new plantlets develop in a cluster around the parent plant, resembling a mother hen protecting her chicks.
